Air fryer potato croquettes are ready to enjoy as an appetizer or side dish, accompanied by a fresh tomato sauce or flavored mayonnaise. They are crispy on the outside and soft on the inside, perfect to please all palates. Boil potatoes with skins on in lightly salted water until soft.

Mash the potatoes

Drain the potatoes and peel them, then mash them with a potato masher inside a bowl

Prepare the mixture

When the potatoes are warm and no longer hot, add the yolk of the egg (keeping aside the white), the grated Parmesan cheese, salt, pepper and the chopped parsley and garlic. Mix well until the mixture is smooth.

Set aside the diced mozzarella

Cut the mozzarella into cubes and set aside.

Form the potato croquettes

Form small croquettes with your hands, giving them a tapered shape, and insert a small piece of mozzarella inside, making sure that the hole is tightly closed.

Bread the croquettes

Dip the croquettes first in flour, then in beaten egg white, and finally in breadcrumbs.

Place the croquettes in the air fryer

Place the croquettes on the grill of the air fryer, making sure not to overlap them.

Oil spray on croquettes

Lightly spray the croquettes with air fryer spray oil.

Cook in the air fryer

Bake in air fryer at 200°C for about 20 minutes or until golden brown and crispy, turning them over halfway through cooking.
