Prepare the beef

Remove the tagliata from the refrigerator at least an hour before cooking for a softer result.

Season and cook the meat

Salt and pepper the meat on both sides. For cooking we have the classic variables: rare, medium, well done. For a cut about 3cm high and medium cooked,cook the cut 10 minutes at 200° in a preheated fryer. Increase the minutes if you want it well cooked (or if the cut is taller), conversely decrease the cooking time for a rare result.

Serve the beef

Once cooked, cut into slanted slices a couple of cm thick and lay on a bed of arugula and cherry tomatoes. Parmesan flakes to taste and a drizzle of oil will complete the dish.
