Fruit tart is a classic dessert that offers infinite variations since it can be garnished with the fruit we like best and that is in season. It is a delicious and inviting dessert that combines the crunchiness of shortcrust pastry with the creaminess of custard and the freshness of fruit. Its appearance super colorful makes it even more inviting and irresistible! This dessert can be cooked in a flawlessly in the air fryer to make it lighter but no less tasty.                                                  

Preparation

For the pastry

In a bowl, mix well the sugar with the egg yolks and room temperature butter. Add the flour and salt and work well but quickly so that the butter with the heat of your hands. Make a loaf, cover it with plastic wrap and let it rest in the refrigerator for about half an hour.

The preparation of the cream

In a small saucepan beat the eggs with the sugar, then add the sifted flour, mix well with a whisk and gradually add the milk. When we have a lump-free mixture put the saucepan in a bain-marie over low heat and stir continuously (in one direction only, never varying) with a wooden spoon fit until the cream thickens just right. Allow the cream in the saucepan over a bain-marie.

Preparation of the tart

Take the shortcrust pastry from the refrigerator, gently lower it with your fingertips and roll it out with a rolling pin, helping yourself with a little flour affintil it sticks together, and trying to give it the shape of the baking sheet (cutting off leftovers with a knife if necessary). Roll the dough on the rolling pin, place it on a nonstick tart pan and prick it with a fork.

Cook in the air fryer

Bake the pastry in an air fryer for 15 minutes at 160°.

Cut fruit

Meanwhile on a cutting board prepare the fruit to garnish our pie: strawberries, raspberries, blackberries, blueberries, currants. A beautiful covering of berries.

Fill the tart

Once raffcooled spread the cream on the pastry and decorate the tart with the fruit in circles concentric circles or as we like.
