Mixed vegetables in air fryer are a special side dish, ideal to accompany both meat and fish.
Vegetables cooked in an air fryer will be nicely browned on the outside and soft on the inside,enriched by the unique and varied flavor of aromatic herbs.
These mixed vegetables can be served alone as a light side dish oraccompanied by other dishes, such as grilled meat or grilled fish. They can also be paired with a light sauce or flavored mayonnaise for an extra touch of flavor.
On a cutting board, dice the eggplant and place in a bowl. Clean the peppers from the white inner part by helping with a knife, then cut them into squares and combine them with the eggplant and zucchini cut into rounds. Add the friggitelli, also cleaned and cut on the long side, and two cloves of poached garlic (crushed without peeling)
