On a cutting board finely chop the mint and set aside.

Season the friggitelli with a drizzle of oil, the mint and grated lemon zest. Finally add the breadcrumbs and toss well. Add a little more oil if the seasoning does not adhere to the friggitelli.

Place the friggitelli in the basket of the air fryer and bake at 180° for 20 minutes.
