Spring rolls have gained incredible popularity around the world, finding their way into many Asian cuisines and beyond. Their versatility, exotic taste and crispy texture have made them one of the world's most loved and consumed dishes. For this very reason, they are subject to many variations, adapted to the local tastes and vegetables of different countries.

The air fryer variant allows these delicious rolls to be enjoyed in a lighter way than traditional frying, while still maintaining that crispiness they are synonymous with!

This reimagined classic, enhanced by cooking in an air fryer, is transformed into a light and crispy dish, celebrating the fresh flavors and variety of ingredients that evoke the East. It is a riot of aromas and textures that will surely delight the palate of anyone who tastes it!

Preparation

Prepare the ingredients

Cut the carrots, onions and cabbage into thin slices, resembling cheerful sticks of color. Then, place the vegetables in a container and season with a drizzle of oil, soy sauce, balsamic vinegar, and salt and pepper to taste

Mix ingredients and bake

Mix everything together and pour the contents into the basket of the air fryer for about 7 to 8 minutes at 160°C, until the vegetables are golden brown.

Prepare rolls

Divide the phyllo dough into 8 sheets of about 20x20cm arranged in a diamond shape and arrange the vegetable mixture in the center. To close the roulade, start at the top corner by bringing it inward and rolling it around the vegetables. Close the sides in a “handkerchief” shape and continue closing by continuing to roll. On the last corner spread the egg white that will act as glue for the roll closure.

Place the rolls in the basket

Once closed arrange them on the fryer basket with a splash of oil.

Cook the rolls

Bake for 7 minutes at 200° in preheated fryer.
