Preparation

Prepare the milk

Bring the milk to a boil in a saucepan. Add a pinch of salt and a little grated nutmeg. Sprinkle the durum wheat semolina into the boiling milk, stirring continuously with a whisk to prevent lumps from forming. Continue stirring until the mixture thickens and pulls away from the sides of the pot, forming a kind of polenta.

Prepare the mixture

Remove from the heat and add the grated cheese, stirring until smooth. Pour the mixture onto a baking sheet lined with baking paper, leveling it with a spatula so that it has an even thickness. Allow the mixture to cool completely in the refrigerator for at least an hour, until firm.

Prepare the Roman gnocchi

Once chilled, cut the gnocchi alla romana into desired shapes, such as circles or squares. Place the gnocchi on an air fryer rack, leaving space between them, and sprinkle the surface with melted butter and pecorino cheese.

Bake in an air fryer at 180°C (350°F) for about 25 to 30 minutes, or until golden brown and crispy.
