Preparation

Cook the eggplant

Heat 1 quart of water in a small saucepan and bring to a boil. Once boiling add the eggplant cut into 4 pieces and cook it for 5 minutes so that it becomes softer. After draining, mash it lightly with a fork to release excess moisture

Chop the ingredients

In a blender, chop the cooked eggplant, cheese, parsley and garlic well. Transfer the mixture to a bowl where we are going to add the bread previously soaked and well squeezed, the egg the salt and pepper. Mix well until the mixture is smooth.

Form the meatballs

With damp hands, form round, compact patties with the mixture and place them on a tray

Pre-heat the air fryer

In a bowl, mix the breadcrumbs with the olive oil. Dip the meatballs in the breadcrumbs, making sure they are well coated. Preheat the air fryer to 200°C.

Cook the meatballs

Place the meatballs in the basket and cook for about 10 minutes, then open the basket and add the already seasoned and spiced cherry tomatoes in the spaces between the meatballs. Close and cook for another 5-10 minutes until the meatballs are golden brown and the cherry tomatoes slightly wilted.

Serve the meatballs with the confit tomatoes
