Potato frittata with provolone cheese and onion can be served alone as a main dish,cut into cubes for a tasty snack or sandwiched between two slices of homemade bread, just like in the old days. It is delicious served with a simple green salad or a fresh tomato and mint dressing. This is a rich and energetic dish, but cooking it in an air fryer makes it lighter due to the reduced amount of oil used. Perfectly balanced between the softness of the potatoes, the sweetness of the sautéed onions and the creaminess of the provolone cheese, it will be soft on the inside with a slight crispness on the outside thanks to cooking in an air fryer.

Preparation

Prepare the potatoes

Cut the potatoes into approximately half-inch slices and place them in the air fryer with a drizzle of oil and the salt. Cook them for 10 minutes at 180°, turning them occasionally, then add the chopped onion and continue cooking for another 10 minutes

Prepare eggs and provola

Meanwhile, beat the eggs in a bowl and add the diced provolone

Continue cooking

Then pour all the mixture to the potatoes and finish cooking for 20 minutes at 140°.
