For the meat sauce

In a saucepan, brown the well-chopped onions, carrot and celery with a little oil. When they are well browned, add the ground meat and cook for 5 minutes more. Add half a glass of red wine and let it brown on a high flame for another 5 minutes, then add the tomato (diluting it with a little water if necessary), salt and pepper to taste. Let it cook for at least 2 hours on a very low flame, if necessary add a little water and so that it does not “stick,” turn occasionally.

For the béchamel sauce

In a pan melt the butter, add the flour and stir well, quickly, to remove lumps, then add the milk in a trickle, continuing to stir with a whisk. When we have finished pouring in the milk, add salt, pepper and nutmeg to taste and continue to cook over a low flame, turning the mixture with a wooden spoon until the consistency is creamy but not too thick.

Prepare the lasagna

Start spreading a layer of béchamel sauce, lasagna sheets, meat sauce, and a handful of grated Parmesan cheese on the baking sheet, and continue making layers until you run out of ingredients. The last layer should have plenty of béchamel and parmesan. Make sure the béchamel is quite runny; if it has firmed up in the meantime, add milk. Prick the whole lasagna with a fork and put it in an air fryer at 160° for 15-20 minutes
